This cucumber and yogurt salad is the easiest upgrade to any meal. Make it in just minutes and see why it’s a staple worth repeating.
Cucumber Yogurt Salad (Khiyar bi Laban)
- Total Time: 15 min
- Yield: 4-6 servings 1x
Ingredients
- 5–7 medium cucumbers, sliced
- 1 cup plain Greek yogurt*
- 2 cloves garlic, minced*
- 2 tbsp fresh lemon juice (about 1–2 lemons)*
- 1 tbsp fresh dill, chopped
- 1 tbsp olive oil*
- Optional: Few pinches of salt*
Instructions
- Slice cucumbers into thin rounds and place them in a large bowl.
- Add the Greek yogurt directly on top of the cucumbers.
- Mix in the minced garlic, fresh lemon juice, chopped dill, and olive oil.
- (Optional) Add a few pinches of salt to taste.
- Toss or shake everything together until the cucumbers are fully coated.
- Serve immediately, or chill for 10–20 minutes for a more refreshing flavor.
Notes
Serving Tip:
Best served cold as a side dish, light meal, or with pita/bread.
