Cucumber Yogurt Salad (Khiyar bi Laban)

Ingredients

  • 57 medium cucumbers, sliced
  • 1 cup plain Greek yogurt*
  • 2 cloves garlic, minced*
  • 2 tbsp fresh lemon juice (about 12 lemons)*
  • 1 tbsp fresh dill, chopped
  • 1 tbsp olive oil*
  • Optional: Few pinches of salt*

 


Instructions

  1. Slice cucumbers into thin rounds and place them in a large bowl.
  2. Add the Greek yogurt directly on top of the cucumbers.
  3. Mix in the minced garlic, fresh lemon juice, chopped dill, and olive oil.
  4. (Optional) Add a few pinches of salt to taste.
  5. Toss or shake everything together until the cucumbers are fully coated.
  6. Serve immediately, or chill for 10–20 minutes for a more refreshing flavor.

 

Notes

Serving Tip:
Best served cold as a side dish, light meal, or with pita/bread.
