Mediterranean-Inspired Chicken Piccata with European Pasta & Fresh Herbs

Ingredients

2 boneless, skinless chicken breasts (halal)

½ cup all-purpose flour

2 tbsp olive oil (Mediterranean grocery staple)

3 tbsp butter

3 cloves garlic, minced

½ cup chicken broth

½ cup dry white wine (or extra broth)

¼ cup fresh lemon juice

2 tbsp capers, drained

¼ cup fresh parsley, chopped

Salt and black pepper to taste

8 oz European-style pasta (such as tagliatelle or fettuccine)

½ cup grated Parmesan cheese


Instructions

Prepare the Chicken – Slice the chicken breasts in half lengthwise and lightly pound them to an even thickness. Season with salt and pepper, then dredge in flour, shaking off any excess.

Cook the Chicken – In a large skillet, heat olive oil and 1 tbsp of butter over medium heat. Cook the chicken for about 3-4 minutes per side until golden brown. Remove and set aside.

Make the Sauce – In the same skillet, add minced garlic and sauté for 1 minute. Pour in the broth, white wine (if using), and lemon juice. Add capers and bring to a simmer.

Combine Everything – Return the chicken to the skillet, reduce heat, and let simmer for 5 minutes. Stir in the remaining butter and parsley.

Cook the Pasta – Meanwhile, cook the European-style pasta according to package instructions. Drain and toss with a little olive oil.

Serve & Enjoy – Plate the pasta, top with the chicken, and spoon the sauce over everything. Garnish with Parmesan cheese and extra parsley.
